Happy 5 Years Anniversary

Its been a crazy 60 months of a journey filled with fights, faith, love, hope and growth. Our love has only grown stronger each day with faith and believe in one another, there are times when we have doubts but there is always something that reminds us its worth it we are worth it. I thank god each day for bringing you into my life and showing me a whole other world that i never knew, you filled my life and brought so much joy, wisdom and happiness.

Thanks for everything you have done for me and for taking care of me when I was ill. Thanks for always being there when I need you. Kuah Kacang (Peanut Sauce)

Serving for 10 persons

1 kg peanuts -  dry roasted in a pan or wok,  remove skin and ground to consistency like sand in the dry mill of your blender (you can have it chunkier if you like).

Ingredients to be blended together:-
* 3 stalks lemon grass, use bottom 1-inch only
* 1 inch ginger
* 1 inch lengkuas (if don’t have this, replace with ginger)
* 1 inch fresh turmeric or 1 tbsp turmeric powder
* 4 – 5 tbsps of brown sugar (I like my sauce sweet, but you can lessen the sugar)
* 4 – 5 tbsps palm sugar
* 15  dried chillies, soaked in hot water, remove from water (or use 6 tbsps chilli boh)
* 20 shallots or small onions (or 4 large onions) – more onions will impart more flavor
* 6 cloves garlic
* 1 inch piece belacan or shrimp paste (optional)

Additional ingredients:-
* Milk from 2 coconuts or 2 cans/boxes of coconut milk plus enough water to reach your preferred consistency
* 5 tbsps of asam jawa or tamarind paste, mix with 2 cups water, throw away the seeds (if don’t have this, then use juice of 1 lemon)
* salt to taste
* 3 – 5 tbsps of cooking oil

Method:-
1) Put all blended ingredients into a heated wok or pan. Stir until the liquid has dried up a bit.
2) Add in the cooking oil, and keep stirring the ingredients to fry then until fragrant and aromatic about 5 minutes.
3) Add in the coconut milk and tamarind water or lemon juice. Bring to a boil. Lower heat and simmer for 5 minutes.
4) Add in the ground peanuts and simmer until there is oil coming to the surface. The longer the time, the more oil is produced.
5) Check for consistency – the sauce should not be too watery or runny but should be thick so that you can dip your ketupat or satay or cucumber into it and the sauce is thick enough to stick on. If too watery, then simmer a bit longer. If too thick, then add a little bit of water.
6) Add about 1 tbsp of salt and the sugar to taste. I like mine a bit sweeter. Remove from heat and serve it hot or cold.


* Note – if you simmer it longer, there will be more chili red oil floating on top and this gives a nice sheen and look to the Peanut Sauce. The oil comes from the peanuts and coconut milk.

August Bad Bad Month

August is such a bad month, 1st up I was admitted to the Hospital due to Appendix. Was a really scary time for me being the 1st time having surgery and all.

Then Hubby has a small accident while trying to exit the round-about and dented the front of our car.

Then  people broke into our house, thank god they did not get to take anything as I came down just in time to scream. They were so daring as to break in at broad day light 11.50 am, all our neighbour were home and assume we were rearranging our furniture and so did we at 1st.

Petknode Cat Boarding Massacre

A Press Conference will be held today at Armada Hotel, Petaling Jaya. All media and press are invited to come. If your an animal lover please do come to show your support or if your the owners of the cats and kittens at the said boarding services please do come and bring along your police report. We want to make sure that they are punish for such cruelness and the crime they are committing at their business premise.BE ANGRY, BE FURIOUS Lets show the authorities that we are serious when it comes to this kind of in-human behaviour!!!

Spread the news to all....Spread it!!!!!!!

The press conference will also be a platform for NGO's to express their frustrations over the poor animal welfare laws which may see the operators walk away with a small fine.We hope owners who have already collected their cats to also be there to speak to the media. They were not held by the police and allowed to go yesterday itself. All the animal welfare groups are expected to attend.

If you are an animal welfare/rescue group and have not received a phone or e-mail invitation, please regard this as your invitation. We are working against time to get the press releases etc in place and because may have overlooked some things. Those who can attend, please be there to show support. Forget about the traffic jam etc, we have to have it at 5pm because many are at work but can leave their respective offices a little early to be on time. This is important.

Please show your support. Let's bring the culprits down!!
